1Preheat oven to 425 degrees.

2Line a baking sheet with foil and spray it with cooking spray.

4Lay the sweet potato out in an even layer on the prepared baking sheet.

8Bring the quinoa to a boil.

9Cover it with a lid and lower the heat to medium low.
